STORY OF MEZCAL

The term mezcal comes from the Nahuatl language, specifically from mezcalli, which is derived from the word “metl” which means maguey and from “ixcalli” which means cooked, and refers to the cooked maguey that the inhabitants of Mesoamerica used as food.

Mezcal has become one of the most representative products of Mexico internationally, since its artisanal character and its variety of presentations have made it a highly demanded drink in national and foreign markets.

According to the Ministry of Economy in Mexico, there are nine states that produce mezcal: Zacatecas, Durango, Guerrero, Michoacán, San Luis Potosí, Guanajuato, Tamaulipas, Puebla and Oaxaca, all of which have the designation of origin of the product.

Mezcal has become one of the most representative products of Mexico internationally, since its artisanal character and its variety of presentations have made it a highly demanded drink in national and foreign markets.

According to the Ministry of Economy in Mexico, there are nine states that produce mezcal: Zacatecas, Durango, Guerrero, Michoacán, San Luis Potosí, Guanajuato, Tamaulipas, Puebla and Oaxaca, all of which have the designation of origin of the product.

In Michoacán this designation was granted in November 2012, covering 29 municipalities, among which is Etúcuaro Michoacán, being the most important producer in the region with 70% of the total production. Although Michoacán is one of the entities that most recently entered the Denomination of Origin of mezcal, in November 2012, this drink is already exported to countries such as Italy, Spain and the United States; However, the key for this sector to grow lies in certification, as it is a determining factor for mass marketing.

The problem that stands out is the lack of certifications, since until 2017, only about 20 producers, of the 400 in Michoacán, have a certification that validates the quality of the drink they produce, and that for the export market is more important than the Denomination of Origin itself.

According to Sedrua figures, in Michoacán there are 100 vinatas registered with 300 grouped producers, but only eight have the certification, while another 20 are barely in the process to obtain it.

The official explained that of the 750 thousand liters of mezcal that are estimated to be produced per year, only 20 thousand, 2.6 percent, have certification and can access export mechanisms to international markets.

In this sense, Rubén Medina Niño explained that having a mezcal, with all its designation of origin and good quality, “is a buried treasure” if it is not certified, which is why he urged agave and mezcal producers to take the courses. , trainings and workshops offered by the Virtual University of Michoacán (UNIVIM) on the subject.

For the Mexican Institute of Industrial Property (IMPI), the highest administrative authority on industrial property in Mexico, this drink has become an engine of economic development, especially in marginalized areas, since the majority are small producers, who With the growth of the industry they are obtaining direct benefits.
